Yields: 4 servings (approx. 10-12 fritters)
Prep time: 30 minutes
Cook time: 20 minutes
Ingredients
For the Arctic Bloom Fritters:
- 150g (approx. 5.3 oz) smoked salmon, finely chopped
- 2 medium potatoes (e.g., Russet or Maris Piper), peeled and grated
- 1 large egg, lightly beaten
- 2 tablespoons all-purpose flour
- 3 tablespoons fresh dill, finely chopped
- 1 tablespoon fresh chives, finely chopped
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon freshly ground black pepper, or to taste
- Vegetable oil, for frying
For the Crimson Glaze (Lingonberry-Beetroot Relish):
- 1 medium cooked beetroot (vacuum-packed or pre-boiled), finely diced
- 1/4 cup lingonberry jam or preserve (cranberry sauce can be substituted)
- 1 tablespoon red wine vinegar
- 1 small shallot, finely minced
- 1 teaspoon fresh ginger, grated (optional, for a subtle warmth)
- Pinch of salt
For the Northern Whisper Cream (Horseradish Crème Fraîche):
- 1/2 cup crème fraîche (or full-fat sour cream)
- 1-2 teaspoons prepared horseradish (adjust to your preferred heat level)
- 1 teaspoon fresh lemon juice
- Pinch of salt
- Fresh dill sprigs, for garnish
Instructions
- Prepare the Fritter Mixture: Grate the potatoes and immediately place them in a clean kitchen towel or cheesecloth. Squeeze out as much excess liquid as possible. Transfer the dry grated potatoes to a large mixing bowl. Add the finely chopped smoked salmon, beaten egg, flour, chopped dill, chives, salt, and pepper. Mix thoroughly until all ingredients are well combined.
- Make the Crimson Glaze: In a small bowl, combine the finely diced cooked beetroot, lingonberry jam, red wine vinegar, minced shallot, grated ginger (if using), and a pinch of salt. Stir well to combine all ingredients. Set aside to allow the flavors to meld while you prepare the rest of the dish.
- Prepare the Northern Whisper Cream: In another small bowl, whisk together the crème fraîche, prepared horseradish, fresh lemon juice, and a pinch of salt. Taste and adjust the amount of horseradish or lemon juice as desired. Cover and refrigerate until ready to serve.
- Cook the Fritters: Heat about 1-2 cm (approx. 0.5-0.75 inches) of vegetable oil in a large non-stick skillet over medium heat. Once the oil is hot, spoon heaped tablespoons of the fritter mixture into the pan, gently flattening them with the back of the spoon to form patties approximately 6-7 cm (2.5-3 inches) in diameter. Do not overcrowd the pan; cook in batches if necessary.
- Fry the Fritters: Fry the fritters for 3-4 minutes per side, or until they are golden brown and crispy. Once cooked, remove the fritters from the pan and place them on a plate lined with paper towels to drain any excess oil. Repeat with the remaining fritter mixture.
- Serve: Arrange 2-3 warm Arctic Bloom Fritters per serving plate. Dollop a generous spoonful of the Crimson Glaze alongside or directly on top of the fritters. Finish with a swirl or a small dollop of the chilled Northern Whisper Cream. Garnish with a fresh sprig of dill and serve immediately.
