Ingredients
For the Salsify Fritters
- 500g (about 1 lb) salsify roots
- Juice of 1 lemon (for acidulated water)
- 1/4 cup all-purpose flour
- 1 large egg, lightly beaten
- 2 tbsp grated Parmesan cheese (optional)
- 1 tbsp chopped fresh chives or parsley
- Salt and freshly ground black pepper to taste
- Vegetable oil, for shallow frying
For the Smoked Paprika Crumb
- 1/2 cup panko breadcrumbs
- 2 tbsp unsalted butter, melted
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- Pinch of sea salt
For the Mandarin-Lime Air
- 1/2 cup fresh mandarin juice (about 2-3 mandarins)
- 2 tbsp fresh lime juice
- 1/2 tsp soy or sunflower lecithin powder
- 1 tsp agave nectar or honey (optional, to taste)
For Garnish (Optional)
- Microgreens or finely chopped fresh dill
- Extra virgin olive oil for drizzling
Instructions
1. Prepare the Salsify
- Fill a bowl with water and add the lemon juice. This is your acidulated water.
- Wearing gloves (salsify can stain hands), peel the salsify roots. As soon as each root is peeled, immediately immerse it in the acidulated water to prevent browning.
- Once all salsify is peeled, finely grate the roots using a box grater or food processor attachment. Squeeze out as much excess liquid as possible from the grated salsify using a clean kitchen towel.
2. Make the Salsify Fritter Batter
- In a medium bowl, combine the squeezed grated salsify, flour, beaten egg, Parmesan cheese (if using), and fresh chives or parsley.
- Season generously with salt and black pepper. Mix well until just combined. Do not overmix.
3. Prepare the Smoked Paprika Crumb
- In a small bowl, combine the panko breadcrumbs, melted butter, smoked paprika, garlic powder, and a pinch of salt.
- Toss well to ensure the panko is evenly coated.
- Spread the mixture onto a small baking sheet. Bake in a preheated oven at 300°F (150°C) for 8-10 minutes, or until golden brown and fragrant, stirring halfway through. Keep an eye on it to prevent burning. Set aside.
4. Create the Mandarin-Lime Air (The « Sonic Bloom » Technique)
- In a tall, narrow container or beaker, combine the mandarin juice, lime juice, lecithin powder, and optional agave nectar.
- Using an immersion blender, tilt it slightly to introduce air into the liquid at the surface. Blend on high speed for 1-2 minutes, moving the blender just at the surface, until a stable, light foam (« air ») forms on top. The sonic vibrations help activate the lecithin and create the delicate structure.
- Carefully scoop the foam from the surface with a spoon and set aside in a small bowl. Repeat as needed to gather enough foam. This should be made just before serving.
5. Cook the Salsify Fritters
- Heat about 1/2 inch of vegetable oil in a large non-stick skillet over medium heat.
- Once the oil is hot (a small drop of batter should sizzle immediately), carefully drop spoonfuls of the salsify batter into the skillet, flattening slightly to form small fritters (about 2 inches in diameter). Do not overcrowd the pan.
- Cook for 3-4 minutes per side, or until golden brown and cooked through.
- Transfer the cooked fritters to a plate lined with paper towels to drain excess oil. Keep warm while you cook the remaining fritters.
6. Assemble and Serve
- Arrange 2-3 warm salsify fritters on each serving plate.
- Generously sprinkle the smoked paprika crumb over and around the fritters.
- Gently spoon a cloud of the Mandarin-Lime Air next to or on top of each fritter.
- Garnish with microgreens or fresh dill, and a light drizzle of extra virgin olive oil, if desired. Serve immediately.
Notes & Tips
- Salsify Browning: Salsify oxidizes very quickly once peeled or cut. Working efficiently and keeping it submerged in acidulated water is crucial.
- Lecithin: Both soy and sunflower lecithin work equally well. Ensure it’s powdered for easy blending.
- Fritter Consistency: If your fritter batter seems too wet, you can add a touch more flour. If too dry, a tiny splash of milk or water.
Make Ahead: The smoked paprika crumb can be made a day in advance and stored in an airtight container. The salsify fritters are best served fresh, but can be reheated gently in an oven or air fryer. The Mandarin-Lime Air must* be made just before serving as it deflates over time.
