Perfect for a cozy evening, this dish promises a symphony of deep, savory flavors that will transport your senses straight to a French farmhouse kitchen.
Ingredients
- 1 kg (about 2.2 lbs) beef chuck, cut into 1.5-inch cubes
- 150g (about 5 oz) lardons or thick-cut bacon, diced
- 1 large yellow onion, chopped
- 2 carrots, peeled and sliced
- 3 cloves garlic, minced
- 750ml (about 3 cups) dry red wine (e.g., Pinot Noir or Burgundy)
- 500ml (about 2 cups) beef broth
- 2 tbsp tomato paste
- 1 tbsp fresh thyme, chopped (or 1 tsp dried)
- 2 bay leaves
- 200g (about 7 oz) button mushrooms, halved or quartered
- 200g (about 7 oz) pearl onions, peeled
- 2 tbsp all-purpose flour
- 2 tbsp olive oil
- Salt and freshly ground black pepper to taste
- Fresh parsley, chopped, for garnish
Instructions
- Prepare the Beef: Pat the beef cubes dry with paper towels. Season generously with salt and pepper.
- Cook Bacon: In a large Dutch oven or oven-safe pot, cook the lardons/bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set aside, leaving the rendered fat in the pot.
- Sear Beef: Increase heat to medium-high. Working in batches, add the beef to the pot and sear on all sides until deeply browned. Remove seared beef and set aside with the bacon.
- Sauté Aromatics: Reduce heat to medium. Add the chopped onion and carrots to the pot and cook until softened, about 5-7 minutes. Add the minced garlic and cook for another minute until fragrant.
- Thicken & Deglaze: Stir in the flour and cook for 1-2 minutes, stirring constantly. Add the tomato paste and cook for another minute. Pour in the red wine, scraping up any browned bits from the bottom of the pot. Bring to a simmer.
- Combine & Simmer: Return the seared beef and cooked bacon to the pot. Add the beef broth, fresh thyme, and bay leaves. Ensure the beef is mostly submerged; if not, add a little more broth or wine. Bring to a gentle simmer.
- Braise: Cover the pot tightly and transfer to a preheated oven at 160°C (325°F). Braise for 2.5 to 3 hours, or until the beef is fork-tender. Stir occasionally.
- Prepare Mushrooms & Pearl Onions: About 30 minutes before the end of cooking, heat a separate pan with a little olive oil. Sauté the pearl onions until lightly browned and softened. Add the mushrooms and cook until tender and slightly browned.
- Finish the Stew: Remove the stew from the oven. Skim off any excess fat from the surface. Stir in the cooked mushrooms and pearl onions. Taste and adjust seasoning if necessary.
- Serve: Discard the bay leaves. Ladle the Boeuf Bourguignon into bowls. Garnish with fresh chopped parsley. Serve hot with creamy mashed potatoes, crusty bread, or pasta.
Boeuf Bourguignon is even better the next day as the flavors deepen and meld. It’s a dish that truly embodies the spirit of French comfort food, offering warmth and satisfaction with every tender bite. Enjoy!
