Ingredients

For the Crust:

  • 1 ¼ cups all-purpose flour
  • ½ teaspoon salt
  • ½ cup (1 stick) unsalted butter, very cold and cut into small cubes
  • 4-6 tablespoons ice water

For the Root Vegetable Filling:

  • 1 medium sweet potato (about 1.5 cups diced), peeled and ½-inch diced
  • 2 medium parsnips (about 1 cup diced), peeled and ½-inch diced
  • 1 small red onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon fresh thyme leaves, chopped
  • ½ teaspoon salt, or to taste
  • ¼ teaspoon black pepper, or to taste
  • 4 ounces goat cheese, crumbled
  • ¼ cup grated Parmesan cheese
  • 1 large egg, beaten

For the ‘Whispered Smoke’ Infused Oil (The Unique Element):

  • ¼ cup extra virgin olive oil
  • 1 small sprig fresh rosemary
  • 1 strip orange zest (about 1 inch long, pith removed)

Precisely 1 small drop liquid smoke (or a micro-pinch* of smoked salt + smoked paprika for an even subtler effect)

For Assembly & Garnish:

  • 1 large egg, beaten (for egg wash)
  • 2 tablespoons toasted walnuts, roughly chopped
  • Fresh thyme or rosemary sprigs for garnish

Instructions

1. Prepare the ‘Whispered Smoke’ Infused Oil:

In a very small saucepan, gently warm the ¼ cup olive oil over very low heat (do not simmer or boil). Add the fresh rosemary sprig and orange zest. Infuse for 5 minutes. Remove from heat. While still warm, add precisely one small drop of liquid smoke (or an incredibly light micro-pinch of smoked salt mixed with an equally small pinch of smoked paprika for a more nuanced effect). Let steep for another 10 minutes off the heat, then carefully strain out the rosemary and zest. Set aside.

2. Make the Crust:

In a large bowl, whisk together flour and salt. Add the cold butter cubes and cut into the flour mixture using a pastry blender or your fingertips until it resembles coarse meal with some pea-sized pieces of butter remaining. Gradually add ice water, one tablespoon at a time, mixing until the dough just comes together. Do not overmix. Form into a disk, wrap in plastic, and refrigerate for at least 30 minutes.

3. Prepare the Filling:

Preheat oven to 375°F (190°C). In a large bowl, combine diced sweet potato, parsnips, red onion, and minced garlic. Drizzle with 1 tablespoon olive oil, chopped fresh thyme, salt, and pepper. Toss to coat evenly. Spread vegetables on a baking sheet and roast for 15-20 minutes, or until tender-crisp. Let cool slightly.

4. Assemble the Galette:

On a lightly floured surface, roll out the chilled dough into a rough 12-14 inch circle. Carefully transfer the dough to a parchment-lined baking sheet. In a medium bowl, combine the cooled roasted vegetables, crumbled goat cheese, and grated Parmesan. Spread the filling evenly over the dough, leaving a 2-inch border. Gently fold the edges of the dough over the filling, pleating as you go, to form a rustic crust. Brush the crust with the beaten egg wash.

5. Bake:

Bake for 35-40 minutes, or until the crust is golden brown and the filling is bubbly and heated through. During the last 5 minutes of baking, brush the ‘Whispered Smoke’ Infused Oil over the exposed root vegetables in the center of the galette. This allows the delicate aroma to permeate without cooking off.

6. Serve:

Remove from oven and let cool for 5-10 minutes before slicing. Drizzle any remaining ‘Whispered Smoke’ Infused Oil over individual slices, garnish with toasted walnuts and fresh thyme or rosemary sprigs, and serve warm.

Notes & Tips

  • Vegetable Variations: Feel free to experiment with other root vegetables like carrots, beets (roasted separately to avoid discoloring other ingredients), or turnips.
  • Cheese Choice: Feta can be a good substitute for goat cheese if you prefer a sharper, saltier tang.
  • Make Ahead: The crust can be made a day in advance and stored in the refrigerator. The ‘Whispered Smoke’ Infused Oil can also be made a day ahead and kept at room temperature.
